I think Lincoln really wanted me to make Fried Green Tomatoes when he picked up a bag full at the last farmer's market this Sunday. Instead, I made a Warm Green Tomato Salad Dressing:
2 Large green tomatoes, sliced
1 Teaspoon lemon juice
1/8 Teaspoon cayenne pepper
1 Tablespoon cooking oil
Heat a pan and, when pan is warm, add oil. Cook the green tomatoes until they are lightly browned and very soft. Puree on a food processor. Stir in lemon juice and cayenne pepper. Pour over greens and serve warm.
